SAVE ENERGY, ROAST A CHICKEN IN LESS THAN 30MINS!
Place your chook on a flat surface breast side down. Using a pair of kitchen scissors cut alongside both sides of the back bone snipping through the rib bones as you go. Remove the backbone, Turn the chook over & open it out & using the heel of your hand flatten down the meat.
Place the chook in a shallow dish & season with whatever takes your fancy. Cook in the oven for 25-35 mins or places it skin side down on the barby & weigh it down with a heavy pan, or as the italians would do ... a foil covered brick for 15mins.
